KC Sunshine's Beginnings

My path to establishing KC Sunshine's Cookies is deeply rooted in my own personal history and experiences. Growing up surrounded by sugarcane fields and learning to bake from my mother shaped my passion for creating delicious treats. In 2016, I had a life-changing, life-saving open heart surgery for a genetic heart condition. My journey through open-heart surgery was a significant turning point in my life, marked by challenges and discoveries. Discovering the benefits of a gluten-free, plant-based lifestyle was a revelation for me, leading to even more improvements in my quality of life. In 2020, I decided to transition from the world of education to the realm of baking. By embarking on this journey, I believed that I could fulfill my own dreams of spreading joy and inclusivity through my own delicious creations. Using my doctoral skills of research and development, I spent three years developing the formulas for my cookies.
